Ingredients
3 ripe bananas
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract
Oil for frying (vegetable or canola oil works well)
Powdered sugar for dusting (optional)
Directions
In a large bowl, mash the bananas until smooth.
In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Add the dry ingredients to the mashed bananas, then pour in the milk and vanilla extract. Stir until just combined.
Heat about 1/4 inch of oil in a skillet over medium heat.
Drop spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon.
Fry each side for 2-3 minutes, or until golden brown and crispy. Be sure not to overcrowd the skillet.
Transfer fritters to a paper towel-lined plate to drain excess oil.
Dust with powdered sugar before serving, if desired.
Variations & Tips
For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. You can also enhance the flavor by adding a pinch of nutmeg or some shredded coconut to the batter. If you prefer a less sweet fritter, reduce the sugar or omit it. Serve with different dips like honey, chocolate sauce, or caramel for an extra sweet twist.
