2-3 lb pork loin roast

1 onion, sliced

2 tbsp extra virgin olive oil

½ cup dark brown sugar

¾ cup apple cider vinegar

½ cup honey

¼ cup soy sauce

2 tsp salt

3 garlic cloves, minced

2 cups fresh pineapple, diced

Optional: 1 tsp crushed red pepper flakes for a spicy kick

Instructions:

 

Begin by heating the olive oil in a large skillet over medium heat. Sear the pork loin on all sides until golden brown to lock in the flavors.
