ZUCCHINI PATTIES
Ingredients:
– 2 large zucchinis, grated
– 1/4 cup onion, finely chopped
– 1/2 cup grated Parmesan cheese
– 2 eggs, lightly beaten
– 1/2 cup shredded Mozzarella cheese
– 1/2 cup flour
– Salt to taste
– Olive oil, for frying
Instructions:
1. In a large bowl, combine the grated zucchinis, chopped onion, cheeses, beaten eggs, flour, salt, and black pepper. Mix everything together until well combined.
2. Heat a generous amount of olive oil in a large skillet over medium heat.
3. Take a small portion of the zucchini mixture (about 2 tablespoons) and gently form it into a patty shape using your hands. Place the patty carefully in the hot skillet, and repeat with the remaining mixture. Cook the patties for about 3-4 minutes on each side, or until they turn golden brown.
4. Once the patties are cooked, transfer them to a paper towel-lined plate to remove any excess oil.

5. Serve the zucchini patties warm with your desired sides and toppings. Enjoy!
