Just made this the other night and we had 0 leftovers!

 

Ingredients
– 4 boneless, skinless chicken breasts
– 1 (14-ounce) can artichoke hearts, drained and chopped
– 1 (10-ounce) package frozen spinach, thawed and squeezed dry
– 1 cup sour cream
– 1 (8-ounce) block cream cheese, softened
– 1 cup chicken broth
– 1 cup shredded Parmesan cheese
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– Salt and freshly ground black pepper to taste
Directions
1. Lay the chicken breasts at the bottom of the slow cooker.
2. In a bowl, mix together the artichoke hearts, spinach, sour cream, cream cheese, chicken broth, Parmesan cheese, garlic powder, and onion powder until well combined.
3. Season the mixture with salt and pepper, giving it a good stir to incorporate all the flavors.
4. Spread the spinach artichoke mixture over the chicken breasts in the slow cooker.
5. Set the slow cooker to low and cook for 6 hours, or until the chicken is tender and fully cooked through.
6. Once done, give everything a gentle stir to coat the chicken thoroughly with the creamy sauce and serve warm.
Variations & Tips
– For those who enjoy a bit of a spicy kick, a pinch of red pepper flakes or a splash of hot sauce can be stirred into the mix.
– You can also try different cheeses; maybe a Gouda or a sharp cheddar could add another layer of flavor.
– If you’d like to keep this recipe lower in fat, opt for Neufchâtel cheese instead of regular cream cheese and use a light sour cream.
