2 cups leftover mashed potatoes

1/4 cup flour

1/4 cup milk

1 beaten egg

1 tablespoon minced onion

1 tablespoon minced green pepper

Bacon drippings or cooking oil

Salt and pepper to taste (optional)



In a bowl, combine mashed potatoes, flour, milk, egg, onions, and green peppers. Season with salt and pepper if needed.

Form the mixture into 3-inch round patties.

Heat bacon drippings or cooking oil in a skillet.

Fry the patties until browned on both sides.

Drain the pancakes on paper towels and serve hot.
