So delicious! This recipe is different than my mama’s but I like it even better!

24 ounces canned salmon
2 eggs
6 green onions, minced
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
Juice from 1 lime
4 tablespoons olive oil
1. In a mixing bowl, combine the canned salmon (drained and flaked), eggs, minced green onions, panko breadcrumbs, grated Parmesan cheese, and lime juice.
2. Mix the ingredients until well combined.
3. Form the mixture into patties, shaping them to your desired size. You should be able to get 8 patties around 1-inch think.
4. Heat olive oil in a skillet over medium-high heat.
5. Carefully place the salmon patties into the hot skillet and cook for about 7 minutes on each side or until they are golden brown and cooked through.
Remove the patties from the skillet and place them on paper towels to remove any excess oil.
Serve your delicious salmon patties with your favorite side dishes or condiments. Enjoy!
Pro Tip: These patties taste great cold when served with salad as well.
