We loved these foil packets in our house! This recipe makes 4 and it’s the perfect size for us!


4 pounds thinly sliced potatoes
4 ounces grated gruyere cheese
2 cups heavy cream
2 chopped shallots
4 cloves minced garlic
1 teaspoon dried thyme
Salt and pepper to taste
1. Combine in a saucepan: heavy cream, shallots, garlic, salt, pepper, and thyme. Heat until steaming, then simmer for 10 minutes. Blend or mash.
2. Wash and thinly slice the potatoes. Divide among four foil sheets, double wrapping the bottom.
3. Pour the cream mixture evenly over the potatoes in the foil packets. Seal tightly with additional foil.
4. Grill over low indirect heat for 20 minutes, rotate packets (no flipping), grill for 20-25 more minutes until potatoes are tender.
5. Open packets, add grated cheese evenly, and grill for another 10 minutes until cheese is melted.
